Homemade sweet treats for stocking stuffers not only taste yummy, they can be a fun project for the whole family to make.
For homemade peanut butter fudge, melt 1/2 cup butter or margarine, 2 lbs. powdered sugar, and 1 can evaporated milk in a heavy saucepan over medium heat for about 5 minutes. Remove from stovetop and stir in a 7 oz. jar of marshmallow cr?me and 1 cup crunchy peanut butter. Chocolate peppermint, cherry almond, and chocolate nut fudge are tasty variations that give this sweet treat a holiday flair.
Chocolate raisin truffles are lower in fat, as well as easy and inexpensive to make. Melt 1 cup milk chocolate chips in the microwave. Mix with 2 tablespoons powdered sugar, 1/4 cup light corn syrup, and 1-1/2 teaspoons pure vanilla extract. Add 1-1/2 cup of chopped raisins. Roll rounded teaspoonfuls into balls. Decorate with crushed nuts, colored sugar sprinkles or chocolate jimmies. Place balls onto a parchment lined baking sheet and refrigerate until firm.
Molasses taffy is another lip-smacking treat that is simple to make. Bring 2 cups each of molasses and sugar, 2 tablespoons butter and 1-tablespoon vinegar to a rapid boil. When the candy reaches 280 degrees F, add 2 teaspoons pure vanilla extract. You may choose to add several drops of peppermint extract instead to give taffy a cool, mint flavor. Pour into a buttered 13×9 inch cake pan. Once the candy cools enough to handle, pull until the taffy is lighter in color.
