Cooking roast pork is not all that difficult. A typical 3-pound pork roast yields at least 6 servings. If your family has a taste for moist, tender meat, a boneless pork loin roasted slowly might be just the thing for dinner. Start by mixing some of your favorite dried spices with one tablespoon of olive oil and then rubbing it over the meat. Do not trim the fat on the side of the roast. This will help to keep the meat moist while roasting. Place the roast on a wire rack in a shallow roasting pan fat side up. Cook the roast in an oven preheated to 450 degrees Fahrenheit for 10 minutes before reducing the temperature. Reset the oven temperature to 250 degrees Fahrenheit and continue cooking the meat. How long to cook roast pork depends on the size and shape of the roast. Meat should cook until the internal temperature reaches 150 degrees on a meat thermometer. This may require another hour to hour and a half of cooking time. After you remove the roast from the oven, allow it to sit for another 15 minutes before slicing.
